Various fruits for embellishment
Cashew cream (see recipe below) for snow capped mountains like pictured above)
Shredded unsweetened coconut
Directions: Cut twelve 3 to 4 inch watermelon pyramids or two large mountain pyramids (for everyone to share).
If making a snow capped mountain, top with cashew cream and shredded coconut.
To make a mountain climber, either take a mini gingerbread man cookie cutter and make fruit "mountain climber" shapes or take berries or grapes (using a toothpick for the latter to hold) and form mountain climbers this way.
Use mint sprigs to make the mountain look green and lush. Have fun and use your imagination!
Last note: If you'd like to do both, you could make your mountain of curses snow-capped (signifying death) and make another "lush" mountain signifying the mountain of blessings!
And finally, the Macadamia Cream recipe by Shazzie:
Immediate Prep: 15 minutes
Yields: 1/2 cup
Special Equipment: Coffee grinder, citrus juicer
10 macadamia nuts
1 orange, juiced
2 Medjool or 4 other dates (if not available substitue another sweetener like Stevia or Agave Nectar)
Combine all ingredients in a coffee mill and blend until totally smooth. (You can also use a Vitamixer.)
