My version is modified, though. I sauteed my onions in olive oil (and added about 1 cup instead of 1/2 cup). So this is what I did:
Ingredients
4 cups tomatoes
1 cup each red and yellow peppers diced (I used 1 red bell pepper and 1/2 green pepper)
1 cup diced onion (sauteed in olive oil)
1/2 cup celery diced
1 tbl chili powder
1/2 tbl cumin
Sea Salt to taste (I used Himalayan salt)
2 cups purified water
Directions
Place water, tomatoes, spices in a blender and blend until smooth. Add peppers, onion, celery mix and enjoy.
*My chili was quite soupy and a little flimsy looking, so I added a mock meat to it in order to add some bulk. It closely resembled ground beef in my chili:
Ingredients
walnuts
olive oil
chili powder (to taste)
cumin (to taste)
Himalayan salt
Directions
Coarsely chop walnuts. Place nuts in a bowl and drizzle some olive oil on it. Sprinkle salt, chili powder, cumin and salt to taste. Then add to the chili!
Also, I topped mine with almond sour cream (blended almonds with water, lemon and salt) and diced green onions. YUM!!!! Meals like that...and I don't think I'll miss my old way of eating!
