Well, after almost completely weening myself off my insulin following a raw food diet, I know, as much as I don't naturally gravitate toward them YET, they are good for me. So, my wonderful husband threw some collard green seeds in the yard and now we have a plentiful harvest in the middle of this bitter cold winter of fresh organic collard greens. So, not knowing what to do with said greens in order to incorporate them into my diet, I went on a search for a pleasant recipe. Praise Yah, I FOUND one! This is what the kids and I have been slurping down each morning with a 100% GENUINE smile on our faces.
3 cups of pineapple juice
8-10 collard green leaves
(you can add a tangerine too if you have one around)
Stevia (to your liking)
All you do is blend. You can also add some water if you want to dilute it a little bit. Sometimes that way it carries us a bit longer. But that's breakfast these days. This batch feeds me and my three oldest kiddos. Baby is nursing and Daddy has not revolutionized YET. lol.
Oh, and one more interesting tidbit: Collard Greens thrive in the cold and lose their bitterness. So here's a really great winter crop for you and your family. I don't even water mine and the leaves are gorgeously green. Bon appetit!
