Heavenly Hamantaschen

Here's a great recipe I used last week for Hamantaschen on Shabbat/Purim.  It's completely good for you!  No sugar...gluten free, yummy!  I just sweetened the cookie batter a little more and replaced the vanilla with almond extract.  But, no more stalling...presenting heavenly, healthy, hamantaschen!

Elana's Pantry is a blog dedicated to gluten-free, healthy recipes.  And this cookie recipe, thanks to this Jewish mom, is simple and delish!  Even my husband (who is a mainstream eater) liked these cookies.  Yum yum...

Enjoy these for Shabbat.  Or whenever you feel like celebrating.  Have them at 10 o'clock in the morning.  Seriously.  You will love them.  

I personally added extra agave nectar and stevia (until I balanced the wet/dry ratio of the two and got the sweetness to my liking).  So, my advice?  Make this recipe your starting point.

Oh, and as for the almond flour, I bought a bag of it at the local grocery store this week for almost $12.  However, you can buy a bag of blanched almonds for $5 and grind them yourself.  Make sure they are dry so the nuts don't make a sticky ball when you process them in a food processor.  But if you can grind them into the same consistency for that significant of a difference, do so.  Use the spare change to do a local mitzvah project.
