If you have a high powered blender, don't buy almond milk from the store. What do I do? I asked my local grocer to stock blanched almonds (same price as the ones with skins but I don't have to blanch them and waste my time that way). I grab a handful (a little more depending on how creamy I want my milk) of almonds, 6 cups of water, about a 1/2 cup of Stevia, and a pinch of salt. Blend it up and you have milk!
That recipe again:
1/2 cup to 1 cup blanched almonds
6 cups water
1/2 cup of Stevia (or to your liking)
a pinch of sea salt
Average time spent: 5 minutes
Blend it...add cocoa, vanilla, whatever you like to customize!
As I digressed from my raw lifestyle to 90% vegetarian, I incorporated a bit of cows milk back into my diet. BIG mistake! I have been extremely lethargic and I'm bruising easily now. The cows milk typically depletes my body of iron. The minute I cut out the dairy, my body snaps back in no time. I did this a week or so ago, coupled with more veggies, fruit, and specifically sprouts, and the energy burst was insane. My goal is to figure out in this harsh economy how to make the raw vegan lifestyle a little more affordable. Start here though with the almond milk. It's cheaper that cow's milk, and a lot better for you. Bon appetit!
